Happy first day of September! I hope everyone is having a great week; I know I am. Despite packing, shopping, working out, errands, and MORE packing,
I've found time to spend to my small kitchen before to my trip to Smith Mountain Lake. It's my last little fling before the summer is done.
That being said, I baked these delectable Cranberry-Oatmeal Bars specifically in response to a request from Shoshana of the blog Shosh and the City,
who also writes for the New York magazine The Resident! She wanted to write a story about healthy oatmeal recipes and asked if she could feature me! Um, duh.
I promptly replied "YES" and began my search for the most delectable oatmeal dish available.
These bars were an excellent choice because they are not only delicious, but also healthy, simple to prepare, and ideal for a quick breakfast.
cook them the night before to plan out your breakfast for the week, which is something I'm definitely in need of as I'm typically too rushed to cook breakfast.sigh
