Get Our 'Yellowstone'-Inspired Bacon Butter Seared Steak Recipe
Despite his rule against discussing business at the family dinner table, John Dutton (Kevin Costner),
the patriarch and prominent owner of Montana's largest cattle ranch, can't keep the tensions down on Paramount's Yellowstone.
Although meals are frequently (read: always) cut short due to Dutton family drama, suppers feature the finest of cowboy cuisine, such as these bone-in, garlic-and-herb basted rib eyes.

¾ cup unsalted butter, split
8 finely sliced raw bacon slices
1 big, finely sliced shallot
1 tbsp Worcestershire
2 bone-in rib-eye steaks (1¼ lbs. each) with ½ tbsp black pepper and ⅛ tsp., at room temperature.
1 Tbsp kosher salt
Two tablespoons canola
4 thyme sprigs 3 garlic cloves
1 rosemary sprig
Put ½ cup butter in a small bowl and set aside. Cook bacon in a large cast-iron skillet over medium-high heat for 5–8 minutes to crisp and render grease. Add shallot and sauté 1 minute to soften.
Add Worcestershire sauce and simmer 30 seconds; remove from heat. Add mixture and 1 tablespoon rendered fat to butter in basin. Sprinkle ⅛ teaspoon pepper and mix well. Wrap in plastic and chill until serving.
In step 2, season steaks with salt and ½ tsp pepper. Use the same cast-iron skillet to heat oil on high. Allow steaks to sear on the bottom for 5 minutes in hot oil. Turn steaks and add ¼ cup butter, thyme, garlic, and rosemary to skillet.
Baste steaks with melted butter, garlic, and herbs for 5–7 minutes until medium rare or thermometer put in thickest portion registers 130°. Transfer to cutting board and rest 10 minutes. Cut steaks from the bone and slice cross-grain. Serve with bacon butter.
